Prevalence and antibiotic resistance of Salmonella species and Escherichia coli isolated from food sold in public spaces in Boromo, Burkina Faso

Street food plays a major socio-economic role, but its preparation and sale in often rudimentary hygienic conditions expose it to bacterial contamination, which is a public health concern. This study aimed to assess the prevalence and antibiotic sensitivity of Salmonella species and Escherichia coli in food sold in public places in Boromo, Burkina Faso. A survey of hygiene practices was conducted among 70 vendors and 60 consumers, followed by the collection of 136 food samples. Microbiological analyses showed a prevalence of 10.29% (14/136) for Salmonella spp. and 12.5% (17/136) for E. coli. In addition, Salmonella spp. strains showed high resistance to antibiotics such as erythromycin (100%)
and cefoxitin (85.71%), while E. coli strains showed high resistance to erythromycin (94.12%), cefoxitin (82.35%), and ampicillin (82.35%). Bacterial contamination and the presence of multi-resistant strains of antibiotics in food sold in public spaces in Boromo highlight a significant health risk. Targeted interventions to improve hygiene practices and raise awareness among stakeholders are needed to ensure better food safety for the population.
